The owners of the Santa Catarina farm have utilized the same organic and bio-dynamic method of farming since the 19th century, using the pulp of the cherries as part of the fertilizer. Shade-grown, hand-sorted, and washed and dried on patios in the sun, these beans produce a coffee with great body, good acidity, and an exceedingly clean cup.
